Steps to make Qatayef Asafiri
- First, we prepare the cream by mixing the milk, starch, and sugar on the cold, and they are put on the fire until the mixture thickens with continuous stirring, and as soon as the mixture becomes thicker, we remove it from the fire.
- Add the vanilla and cream and stir, and leave the mixture to cool before using it.
- Then we prepare Qatayef by mixing the dry ingredients in a bowl, this means that we mix the flour, semolina, baking soda, yeast, salt and sugar together.
- We start adding water gradually with continuous stirring.
- Leave the dough to rest for 30 minutes before using it.
- We heat a pan on the stove.
- Once heated, add an amount of the mixture to form a Qatayef disc, taking about two tablespoons each time.
- We leave the qatayef on the fire until bubbles begin to appear, and until the qatayef does not contain any liquids.
- We take out the Qatayef from the bowl and do not turn it over on the other side, so one side must be white.
- We repeat the process until the Qatayef dough is over.
- We cover the qatayef with a towel when removing it from the stove so that it does not dry out, and so that we can work on it easily.
- Leave the qatayef to cool down a bit, then start stuffing it with cream.
- We hold one of the Qatayef and put a spoonful of cream in it, and close the Qatayef so that it is in the shape of a parchment and there is an opening at the top.
- We put the open side in the crushed pistachios, and put the qatayef in the serving dish in an orderly manner.
- Sprinkle a little syrup on the qatayef, as desired.
