Almond paste ingredients

  • An amount of semolina flour (semolina flour) is equivalent to two cups.
  • The amount of sugar is about half a cup.
  • Two teaspoons of baking powder.
  • Half a cup of butter.
  • Half a cup of unsweetened grated coconut.
  • A cup and a half of milk.
  • A quantity of almonds as desired.
  • A tablespoon of tahini.
  • Syrup (1 cup of sugar, 1/2 cup of water, 1/2 teaspoon of lemon juice, and 1/2 spoon of orange blossom water or rose water)

Steps to prepare almond mush

  • We make the syrup by mixing sugar with water and lemon and put it on the fire, and leave it to boil, then we reduce the heat, and leave it until it thickens, then we remove it from the fire and put orange blossom water or rose water.
  • Preheat the oven before starting to prepare the harissa.
  • We mix the dry ingredients semolina, coconut, sugar, salt and baking powder.
  • Mix the milk with the butter well, then add them to the previous mixture and stir well.
  • Grease a baking tray with tahini, then put the mixture in it.
  • Leave the mixture for a period of time, about 10 minutes, and cut the dough in the shape we prefer.
  • We put an almond on each piece of mush.
  • Then we put the mixture into the oven for 30 minutes until it turns golden.
  • As soon as the harissa comes out of the oven, we mark the lines with a knife.
  • We put the cold syrup on the hot mush and leave it to cool for two hours.

Tunisian almond mush

This recipe is prepared in both Tunisia and Algeria in almost the same way, and it may be known in Algeria as the almond heart, so if you want to prepare Algerian or Tunisian almond harissa, follow this method.

Tunisian almond mush ingredients

  • Two and a half cups of ground almonds (almond flour).
  • An amount of semolina is equivalent to a cup and a quarter.
  • A cup of soft sugar.
  • About 3 tablespoons of oil.
  • 4 eggs.
  • Half a teaspoon of almond extract.
  • Two teaspoons of orange blossom water.
  • Grated peel of half an orange.
  • Baking powder half a teaspoon.
  • Half a teaspoon of vanilla.
  • pinch of salt
  • A little oil to coat the baking tray.
  • To make the syrup (3 cups of water, 1 1/2 cups of sugar, 2 tablespoons of lemon juice, ½ teaspoon of vanilla, 5 tablespoons of orange juice)
  • A handful of grated almonds for garnish.

Tunisian almond harissa recipe

  • Preheat the oven at 190 degrees and leave it.
  • Meanwhile we make the dough.
  • In a bowl, put baking powder and semolina flour.
  • In another bowl, mix eggs, oil, almond extract, orange blossom water, orange peel, vanilla, salt, and sugar, and stir until the mixture blends.
  • Add the semolina and baking powder mixture to the previous mixture and stir the mixture until it blends completely.
  • In a baking tray of size 28 * 20, we put the previous mixture.
  • We put the mixture in the oven, which has been preheated for 35 minutes, until it takes on a golden color.
  • Meanwhile, we make the syrup, by mixing the ingredients of the syrup together and putting it on a high heat, and as soon as the mixture boils, we reduce the heat and leave it for a quarter of an hour.
  • Once we take the harissa out of the oven, let it cool for 10 minutes.
  • We cut the harissa in the shape we prefer, then pour the syrup on it so that you can drink it.
  • We leave the mush for an hour until the syrup is completely absorbed.
  • Sprinkle almonds on top and serve.

Healthy almond puree
