Ingredients for Palestinian Chicken Musakhan
- A whole chicken cut into four pieces.
- 6 grains of onions.
- olive oil.
- Squeeze one lemon.
- salt.
- Cardamom.
- black pepper.
- sumac
- cinnamon.
- cave paper.
- ginger.
- Taboon bread.
How to prepare
- First, boil the chicken in a pot on the stove, put the chicken pieces with an onion cut into four pieces, 4 cloves of cardamom, 2 bay leaves, and half a spoon each of (cinnamon – ginger – black pepper).
- Immerse the chicken pieces in hot water and bring to a boil over medium heat.
- While boiling, put a tablespoon of salt.
- Slow down the heat, and cover the pot for an hour, until the chicken pieces are tender.
- To prepare the onion mixture for the Musakhan, chop 4 onions into thin wedges.
- In a frying pan, put a cup of olive oil and let it heat up a little.
- Add the onion pieces to the olive oil and keep stirring for a few minutes.
- Add a tablespoon of salt to the previous mixture, and 5 tablespoons of sumac, and mix all the ingredients together.
- After the chicken pieces are cooked, we remove them from the stove and leave them to cool down a bit.
- In an oven tray, we stack the chicken pieces, and brush them with a little olive oil, adding a pinch of salt and a pinch of sumac.
- In a preheated oven at 250°C, place the chicken tray and leave it for 20 minutes, until golden brown.
- We prepare 4 loaves of taboon bread and brush it with onion oil.
- In the serving dish, place the taboon bread, then add the onions with spices, then the chicken pieces.
- You can decorate the dish with nuts.

Musakhan rolls are among the most popular Ramadan side dishes in Arab tables, due to their ease of making and delicious taste. You can make a roll mosakhan by following these steps:

Ingredients of Musakhan Roll
- Boiled chicken.
- 4 grains of chopped onion wings.
- Arabic or saj bread or tortilla bread.
- olive oil.
- sumac
- Cardamom.
- salt.
- black pepper.
How to prepare
- Separate the chicken meat from the bone, then cut the meat into small pieces.
- In a frying pan on the fire, put an abundant amount of olive oil and let it heat up a little before adding the onion wings to it.
- Stir the onion in oil until its color wilts, then add salt and black pepper to it and keep stirring.
- After a few minutes of stirring, add the shredded chicken pieces and mix the ingredients together.
- Add 5 tablespoons of sumac and stir, and you can add a tablespoon of chicken spices.
- We prepare the bread and cut each loaf into triangular pieces.
- In each triangle of bread, put a quantity of the chicken and onion mixture, and roll the piece of bread in the form of a roll.
- In an oven tray, we stack the musakhan rolls and sprinkle them with a little olive oil and sumac.
- We enter the tray in a preheated oven at 180 degrees for 10 minutes.
- In the serving dish, we stack the musakhan rolls and decorate them with pine nuts.
